I've never had a better tomato soup! There have been three times that I have made this recipe! Flavorful and full-bodied without the use of cream! Thank you so much for posting this! I appreciate it!
Even though it is soup season, I would be okay with eating soup for 12 out of 12 months of the year if that was the only option I was given. I could live off this homemade tomato soup all year long if I let it.

This recipe is based on the cream of tomato soup recipe included in Saveur's New Classics cookbook (affiliate link), and yes, I have essentially read this book from beginning to end. Reading a cookbook like this cover to cover and cooking it cover to protect the best thing that ever happened to me.

Can I blow your mind for a moment? The base of this homemade tomato soup is bacon. B-a-c-o-n. There's something about tomato soup and bacon that works. Those are just a few of the delicious ways in which Saveur inspires us.

Is bacon necessary to make this dish? That's right! I'm just kidding; if you'd like to skip it, you can do so. It adds a subtle smokiness and richness to tomato soup that you didn't even realize you were missing. This dish has that secret little depth that will have you asking yourself, "why is this so good?! "In between dunks of cheesy bread into the cheese sauce, repeat this repeatedly.

It is also hard to beat the velvety texture when blending the ingredients and drizzling some cream over the top. And the best part about it is that it is so easy to put together, which is always a win in my book, no matter what! I love simplicity, yay! It's a yay for deep, deep deliciousness.

We're Also Working On The Following:

    • Here are some fresh vegetables and aromatics you can enjoy, such as carrots, onions, and garlic.
    • There are a lot of yummy herbs, such as thyme and bay leaves, that you can use it.
    • A delicious can of (HAND-CRUSHED) San Marzano tomatoes provides an abundance of tomato goodness.
    • The cream. Of course.
Oh my gosh, the smells that will be released in the coming days. As much as I enjoy having a simple homemade tomato soup simmering in my kitchen, there is nothing more comforting than enjoying the simmer-smells of this simple soup in the middle of the day.

As a first step in making this soup, you will want to crisp bacon in a large pot or Dutch oven.

Toss your cut-up veggies into the pan once things are looking crispy. It is a good idea to stir everything to make sure it is all coated in the bacon grease.

If you put a bit of tomato paste and a bit of flour in the pan, you will see things begin to caramelize very quickly. I don't know, gosh. Let's talk about this soup, folks! I can't believe we haven't even finished this yet, and it's already so good!

The soup should simmer for a few minutes after adding your can of San Marzano tomatoes, some dried spices, and broth to it and let it simmer for a few minutes. As far as the high maintenance part of the soup is concerned, if you can call it that, it has been completed.

After that, give your soup a quick whirl in a blender (or an immersion blender, if you have one). Then splash in a bit of cream and a light salt and pepper treatment, and you're done. That's all there is to it! Making this clear and delicious soup takes less than an hour.

    1. Adding flavorful herbs and spices to the dish is a good idea. It is often found that basil is used in tomato soup, which is delicious. You can also add other spices and herbs for a more flavorful dish. Leveling up your tomato soup by adding fresh herbs such as rosemary, thyme, chives, and parsley, and zippy cheese such as feta is possible.
    2. Make sure you remember to add the cream at the end. Add coconut milk, heavy cream, or butter if you want your tomato soup to have a silky texture. In other words, we are talking about a richness that tastes decadent without overly indulgent.
    3. It would be nice to add a drizzle, fresh zest, or dollop before serving. There is no doubt that this will take it right over the top. You can change your life with pesto, sour cream, fresh herbs, or lots of cheese.
